Meal Prep & Exciting News!

It's that time again! Another long day of food prep is in the books, and it was a good one. This week we have egg white muffins, yams, veggies, almond flour pumpkin muffins, brown rice noodle lasagna, ground turkey, and salsa chicken. Oh, and I can't forget the coconut macaroons. Recipe coming this week! 


Workouts this week will be my own thing again and I will do my best to post a few of them. I actually only have 4 workout days this week and then we are off to Coachella! I'm soooo excited but definitely have a whole bunch to do before then. I also need to figure out what I'm bringing with us as far as food-- I do know I'm going to try to find some Quest bars, I've never tried them but I've heard good things and I think they'll be perfect to sneak in and munch on. 

And now the best news ever... I bought the online NASM certification program today! (That's a lie, B bought it, he's my "sponsor" as he likes to say.) I'm going to start studying ASAP and will hopefully be a certified personal trainer in about 3 months! Woohoo!! Can't wait to stick another check mark on my bucket list :)

  1. QuestBar's are delicious! Brownie, Strawberry Cheesecake are yum! Banana bread taste just like banana bread and I have yet to try the apple pie/cinnamon bun. They're a little chewier in texture, but LOADS (18g or more) of fibre:)

  2. That's awesome! Would love to hear about your certification experience. As I fall in love with fitness more and more, I've started to wonder if this is the career path I want to take. But am so afraid to make the jump. There are so many personal trainers out there. And since the certification process isn't regulated, I don't know if the test I pick is worth it or just a way for the company to grab our money.

    1. There are definitely some that are far more credible than others. I've done my research and NASM seems to be one of the best.

  4. Don't forget to heat your quest bars in the microwave for a few seconds. It's like a warm cookie. You will be a great personal trainer. You have a lot of fans/followers that would trust your training.

    1. No plans to actually be a personal trainer, just doing it more to gain knowledge and be able to answer questions in a more educated way!

  7. OMG SOOOOO excited, happy, for you!!!!!!!!!!!!! A personal trainer is something that you were born to do. You are going to ROCK!! I would definitely let you be my trainer. I did some of your bi,back workout today mixed into JW program and OMG ouch. Good stuff.

    Looking forward to the coconut recipe but know you have me intrigued by Almond flour pumpkin muffins. I bought some Almond flour 2 weeks ago but haven't experimented yet. I have been trying recipes with coconut flour and they are seriously bombing :0(. SO hard to get ratio's right with that stuff grrr...

    1. No plans to actually be a personal trainer haha doing it just to gain more knowledge and know that I'm answering questions with the utmost confidence :) I actually ran out of coconut flour this week and didn't realize it so I didn't have a chance to make them again!

  8. Congrats, I plan on doing either NACM or ACE this year as well. Would also love to hear about your experience. As far as the quest bars go, their amazing. If you can find the chocolate chip cookie dough ones (they're relatively new) I would stock up on those, best by far.

  9. i just ordered quest bars so we could have them because we are going away this weekend!
    how do you store your muffins? mine were getting a really weird consistency after a couple days and i was grossed out! i need to try to make some again.
    do you want to be a trainer as your only job or a side thing? congrats and good luck!

    1. Keep them in the fridge-- there are no preservatives in them so leaving them out is definitely going to cause them to mold within about a day. I actually am just getting certified for the knowledge, I'm super happy with my current job and definitely not going anywhere anytime soon :)

  15. I've had quest bars for the last two years, they are wonderful. I am lactose intolerant and it is a dairy based protein in them, so I have to take them with an enzyme pill and at least 8 oz of water to help it through my system. They are very tasty! But I only keep them in my car for whenever I can't get to actual food and I don't wand to skip a meal. I think you'll love em!

  17. You aught to look at more variety and more vegetables! Nothing turns you off of clean eating faster than eating the same old same old. Majorly Fit can give you lots of ideas. You can't possibly be getting all the nutrients benefits that raw veggies and more fruit have to offer, which contain vitamins and minerals that protect against colds all kinds of illness. Not enough of that in your diet, in my opinion. Maybe that's why you fell sick immediately following your depletion for the photo shoot. Food for thought :)

  18. I make sliced sweet potatoes all the time and I absolutely love them!! When you take them with you and eat them, how many do you have? A whole potatoes worth, or less?

    1. I bake them plain and then either dip in ketchup or sprinkle with cinnamon. I usually have about 4oz at a time.
