A New Snack and Sunday Meal Prep

I'm very happy to report that on this Monday morning I am finally, finally feeling better. It's crazy how quickly a bad cold can put you right on your butt! It really took a lot out of me and I definitely didn't have any energy for the gym, so it's going to feel great to get back to the norm this week. As you can probably imagine, I didn't have much of an appetite while not feeling well, but I did want to share this little snack that I used as my go-to because it was easy and light. 


This is just no nitrate, low sodium turkey breast from Sprouts on sliced cucumber with mustard and tapatio. I try to stay away from deli meat if possible, but I found this freshly shaved and when I saw it had no nitrates I figured I would give it a shot. Good thing because I ate this a couple times throughout the weekend. 

I somehow found the energy to go grocery shopping and do some meal prep on Saturday. In fact, the only thing I felt like doing was baking which is kind of weird... but I did it! 



On the menu this week: banana protein muffins, Jamie Eason turkey muffins, Egg white & veggie muffins, brown rice lasagna for B, coconut protein muffins, and some roasted veggies. I will be posting the recipes for the egg white muffins and coconut protein muffins THIS WEEK, I promise. In addition to these foods, I'll be making fajitas, bison burgers, and tacos this week for dinners which I'll also bring for lunches the next day. I'm excited to get back in the gym and keep my nutrition on point these next couple weeks-- we are going to Coachella in 2 weeks and I could not be more excited! This means lots of bathing suits and crop tops (and you better believe flower headbands will be involved too) so I have to make sure I'm ready!!

  1. Hiya Brittany, glad to hear you are feeling better and back in the gym :) Your meals for the week look delicious! I was wondering if you could help me with some tips on meal prep please? I am still struggling to get my head round menu planning. How do you decide how many recipes you will be making at the weekend and how many of each to make? Do you have a chart or spreadsheet you use? Any help would be very much appreciated thanks! xx

    1. I usually just try to make breakfast foods and snacks, and then I make something for B to eat throughout the week too. Then I just make dinner each night and use that the next day for lunch too. There's not really a method to the madness I Just kind of have it down now and know what/how much we eat in a week.

    Hey Brittany glad to here you are feeling better :0). I have a dumb questions. What exactly are nitrates? I here about them in foods and know they are bad just not sure exactly what they are. Thank you.

    Also did you post the recipe for the egg white/veggie muffins and I missed it? Oh and can't WAIT for the coconut protein muffin recipe. I just bought some coconut flour and can't wait to try it. I have heard so many raves.

    1. Nitrates are used to preserve the meat and they've been linked to cancer. There's a lot of debate about it but I'd rather be safe than sorry if I can help it! No, I'm going to post the recipe this week!

  4. Glad you're feeling better!! Quick question... for which meals will you plan to have the banana protein and coconut protein muffins with? Just curious... I made a commitment to do early AM workouts right now so I've been making your apple cinnamon muffins to eat on the way to the gym and I love them! I love that the protein/carb ratio is perfect for my needs :)

    1. the banana protein muffins are more for B for breakfast-- I had half of one this morning after my workout because they sounded really good :) I'm having the coconut ones with my mid morning meal.

  7. OMG!..I just made the banana protein muffins and they are THE BOMB!! I had a question about the lasagna though...I have made that as well and its super tasty too, but i noticed every time you make it you say its for B... Why don't you eat it too? Is it not that healthy?

    1. yay glad you like them! It's for him because I use mozzarella and I can't eat cheese :( I could do half and half but this lasts him for lunches throughout the week so it makes it easy.

  8. Hello- I made a comment earlier, but I know you get bombarded with tons of questions and comments daily so some easily get lost :) But .. How do you incorporate your extra 200 calories or xamount lost during a workout when you are trying to build? Are those mainly consumed through carbs, protein, etc? And are those extra calories you add in on top of your normal diet for building?
