Cardio & Sweet Potato Pancakes

It's no secret, cardio is not my favorite thing to do. I could lift weights all day every day but the second you put me on a treadmill I'd suddenly rather be anywhere else. It's funny because I used to be the queen of cardio because that's all I was ever comfortable with doing... How silly! Anyway, I'm writing this because guess what I got up and did for a whole 25 minutes today? Yep. Cardio.


As much as I hate it there's no denying it works wonders when trying to cut down and reveal muscle. I always keep my cardio at the bare minimum which allows me to not have to do a whole lot when something important comes around. I plan on talking about this subject in a vlog after my shoot so stay tuned! Here's a post cardio pic- and look, I was even kinda smiling! I have to admit, I felt great afterwards...


After my cardio this morning it was time to refuel and I have to admit, yams are sounding less and less appealing lately so I needed to switch it up a bit. Instead of this


I had these! 



And guess what? They're exactly the same thing! Tricked myself into thinking I was eating a nice big stack of my favorite pumpkin pancakes with lots of Greek yogurt and syrup on top... Okay let's be real there were no tricks involved, BUT these were pretty darn tasty, and SO easy. Literally this is just 4 oz yams (cooked) 4 egg whites, cinnamon, and Kal Stevia. That's it! They were sweet and filling-- perfect! 

Any other cardio lovers or haters out there?

  1. Your pancakes look so fluffy and yummy!! What do you eat before you workout? And does your pre/post workout meal change depending on your training--cardio/weights?

    1. On a usual day, egg whites and oatmeal or egg whites and Ezekiel toast. Regardless of the workout I always refuel with carbs and protein :)

    I love cardio. I've cut WAY back recently and miss it. I know it's for the best.

  4. I don't mind a HIIT session or 3ish each week, but I'd MUCH rather throw some weights around :)
    This time last year I was doing HOURS of cardio each week and dare I say it, well on my way to adrenal fatigue, and I was STARVING.
    Exit trainer, enter JE LiveFit and a few awesome bloggers later and i'm leaning out much healthier ;)

  5. I'm so glad you said that. I HATE cardio in the worst way. I'd rather lift weights for hours than to do 20 mins of cardio. I'm now trying two HIIT sessions per week and three "steady state" walking between 2.5-3.0 mph on a 12-15% incline. (I vary it and it helps). I've also started taking my ipad to the gym with me and I've been watching movies on NetFlix, so it's not quite as heinous ... but I'd still rather lift :)

  6. I love tabata and HIIT cardio. I love to lift too, so I guess I'm lucky! And, I'm loving my Polar heart rate monitor...it's so fun to see how many calories I burned after every workout and the various levels of my heart rate depending on the workout. Tabata and HIIT I get in the high 170's....it's crazy.

  7. Cardio & I definitely have a love/hate relationship. I love those mornings when you would really rather sleep in, but you muster up your willpower and push through your cardio and feel so much better after your done. It pays off with the extra energy it gives you throughout the day!

    Awesome spin on protein pancakes! I haven't tried them with yams yet!

  8. Tomorrow is the end of Week 2 for me of Jamie Eason's trainer and I'm dreading the 30 min cardio sessions in Month 2. It's just SO boring. A 30 min run outside goes SO fast... but there's no kid's club for the outdoors! :(

  9. I am NOT a cardio person. I would rather lift too. Forcing myself to do one more rep somehow comes easier to me than forcing myself to keep up with 5 more seconds of HIIT. BUT - I do love the way I feel after intense cardio!

  12. You post a lot about clean eating and someday I'd really like to try it out. But right now I'm in college and I don't have the money or time to make it work. I do make it to the gym though. I have noticed I've been thinning out but I haven't noticed much muscle growth. Is it possible to see results without eating clean?

  14. I have tried your sweet potato pancakes and they are so moist. I do not even add stevia...just egg white, sweet potatoes and cinnamon. Sometime, I top it with warmed up blueberries or with almond butter. Yummy. Thank you for the great idea. Sweet potatoes are in the oven right now to make another batch.

  15. How do you cook these? I tried them last night on the pan and it was so difficult to flip the pancakes over without it breaking apart.
