What I Ate Wednesday- New Year, New Food

Okay, that was a total lie.

New year, same food. But why change what isn't broken, right? ;)

I do have lots of new recipes lined up, I'm just facing a problem with the sun. You see, when I wake up it's dark, and by the time I'm home from the gym, showered, dressed, and food packed, it's time to run out the door. Then before I know it 6 o'clock is here again and so is the darkness. Food photos come out best when taken in the sunlight which means I need to be a crazy cooking lady over the weekend so that I can take pictures and post recipes!

Anyway, you won't see anything too new and frankly my carbs were low today. Blah.

Apple cinnamon muffins topped with tons of greek yogurt, cinnamon, and Truvia.

Post workout I had my usual shake- Dymatize protein powder, pumpkin, cinnamon, oats, almond milk, and spinach. Then for my snack I had greek yogurt and a piece of Ezekiel bread. I think I might actually be getting tired of cottage cheese.... finally!

Lunch was simple; baked chicken breast and sweet potato fries. For the chicken I scrambled up an egg and added a splash of Almond Milk then dipped my chicken in it and placed it in a baking dish. I seasoned with pepper, garlic powder, and onion powder and baked for 40 minutes. So simple but way better than just plain chicken.

I planned on making dinner when I got home, but I didn't get home until late and there just wasn't time. So, I picked up a rotissere chicken from the grocery store and made a quick salad for dinner.

I ended the day with casein pudding, as usual!

Do you switch up your meals often, or do they stay the same for the most part?

  2. If I had a most used phrase it would be "why fix what isn't broken!?" LOL! People could place beats on what is going to be on my plate or in my lunch bag. Like Meg I TRY to change but end up missing my regular eats and feeling TOTALLY unsatisfied.

However, that baked chicken sounds easy and yummy!! When you buy a store bought rotisserie do you just use the breast meat?

    Have a GREAT day girl!!!!!

    1. Yes, it's not ideal becuase it's obviously cooked in oil, but I just pull off the skin and eat the breast meat :)

  3. Ugh.. I am already sick of cottage cheese and it's only been two weeks. Any tips on making it taste better, or do you generally just eat it plain?

    1. I never eat it plain! I add cinnamon, truvia, and a sprinkle of vanilla protein powder. Makes all the difference in the world!
