McMuffins for Breakfast...Clean of Course!

Yesterday was another Sunday chock full of clean eats! I think I have mentioned them once or twice before, but Food For Life brown rice English Muffins are the sh*t. They taste awesome with coconut oil and cinnamon, but they are also perfect to make "McMuffins". This is one of B's very favorite breakfasts because of course he feels like he is eating something that's not good for him, but in reality they're not bad at all! I just cook a couple eggs over medium, a couple slices of Applegate (no nitrate) turkey bacon, and a couple slices of cheese (or almond cheese for me). If you're ever having that McDonalds craving give this a shot! 


After breakfast we did a whole lot of nothing until I decided it was time to get cookin'. Food prep this week wasn't much, but I did Zucchini bread and substituted 1/2 cup of the oat flour for 2 scoops of protein powder. I had 2 slices this morning before the gym with some greek yogurt on top. 


It was perfect. 


I also did a batch of brown rice made with 1/2 water and 1/2 low sodium chicken broth. And lastly, a big turkey/veggie/egg white mixture to have for lunches throughout the week. 


I picked up some fettucine style brown rice noodles when I bought the elbow ones for the chicken noodle soup, so I decided to throw together a little pasta dish yesterday afternoon. I just used Monte Bene pasta sauce and added some turkey and a few extra Italian spices. I ate mine with lots of broccoli and cauliflower. Yum!

  1. Girl you are making me hungry with all that great looking food!!! I may have to make a trip to Whole foods soon to try some of those food for life muffins. I'm thinking they would make a yummy turkey burger. I am already obsessed with Ezekiel bread with coconut oil and cinnamon. YUMMO!!! I SERIOUSLY gotta make that zucchini bread soon. Man, I LOVE clean eating. The food is ALL so yummy AND I can eat a lot more of it!! Who wouldn't love that??

    1. I get it at Sprouts, but any health food store should have it! It's not near the regular cheese though, it's by the tofu and greek yogurt :)

  3. love the turkey/veg/egg white mix! do you just cook the turkey and veg separate and then add it to the egg white mix? and then re-heat in microwave at lunch? thanks for all the great tips and recipes!

  4. Thank you for proving food we "think" is bad for us can be turned into something clean & healthy! I have tried many of the Food For Life brand products but have not tried the english muffins. Lately, I've been using the Food For Life pita's and topping it with hummus. Yum! Thank you for sharing so much with your readers. I always start with your blog when I'm menu planning for the week. Let's see ~ your banana protein bars and sweet & sour chicken top my list! :)

  5. Food for Life = love! I have the brown rice tortillas all the time, as well as the low-sodium Ezekiel bread, but I've never tried the english muffins. I loved egg McMuffins as a little kid though, and I still crave them from time-to-time, so I'll have to pick up some muffins and turkey bacon next time I'm at Whole Foods.
