Clean Eating Pumpkin Oatmeal Cookies

I was having a major sweet tooth on Sunday afternoon and seriously contemplated making a trip to Yogurtland (my all time favorite) but decided since this is my week off from the gym, that could probably wait. Instead, I decided to start to use up some of the many cans of pumpkin in my pantry, and get a little crafty in the kitchen. Unfortunately, my recipe was not successful at first, but don't you worry... I fixed it right up and now I'm sending these puppies off with B to keep at the office because they're just too good to stop at one!

2 cups oats
1/2 cup oat flour
1/2 cup unsweetened applesauce
1/2 cup pure pumpkin puree
1/3 cup Truvia for baking
2 egg whites
2 tsp cinnamon
1 tsp pumpkin pie spice
1 tsp sea salt
1/2 tsp baking soda

1. Preheat oven to 350 degrees.
2. Place all ingredients in mixer and mix well.
3. Spoon dough onto cookie sheet covered with parchment paper. This recipe made 12 large cookies.
4. Bake for 12-15 minutes.

*Keep in mind, these don't have butter or regular flour in them, so the consistency will be a bit different from a "regular" oatmeal cookie :)

  3. Oh my I believe I may be drooling. These look super yummy!! I can understand why you sent them off with B LOL!!!

    OMG Yogurtland!!!! I used to NEVER be able to say no to that place. LOVE! Peanut butter chocolate and pistachio....OMG!!! I was super worried when one opened up down the road from me about 3 months ago but I have to admit ever since doing JW program my cravings for sweets yummies (MEXICAN BREAD!!!!!) have not come. So, I figure if I am not craving a treat why have one just to have one? There may come a day when I really want something and that is when I will have partake.

    Once again thank you for the recipe and for your wonderful blog. Hope you are enjoying your rest week. You work and deserve a break. BTW ever tried making a pudding out of Greek yogurt and pumpkin. With a little dash of pumpkin pie seasonings ( cinnamon, cloves, Pumpkin pie spice) OMG taste just like pumpkin pie without the crust. MMMMMM.

    1. It's crazy to think we used to eat Yogurtland at LEAST once a week! I've never tried that but it sounds awesome! I am enjoying my time off but definitely ready for Friday already!

  5. I like making some just like this with only oats, pumpkin, applesauce, pumpkin spice, cinnamon, flaxseed and maybe some banana for a little sweetness. They are super yummy and I have a hard time eating only one. :)

  6. I have made these several times, my family loves them! I threw in a scoop of vanilla protein on my last batch for funsies and they still came out great. Thanks for the recipe!
