Carb Fears and WIAW

Carbs are back in full swing, and I'm loving it! I have to call myself out on not eating as many carbs as I said I was going to. Only recently have I really increased my carbs. Why? Well, to be honest it's scary. I have this little voice in my head that constantly makes me second guess myself, and makes me wonder if I really need more carbs. It tells me, maaaaybe you can get away with building muscle while keeping carbs on the lower side. LIES! The voice lies and I'm finally allowing myself to accept that. Am I going to be as lean as I was over the summer? No. But that's okay because being lean is not my goal right now, my goal is building muscle. It has taken me a few weeks to accept this, but I think I'm finally there and I think you'll see that in my eats. 

I hope that being transparent with you helps you understand no one is perfect and you're not the only one that second guesses yourself. I do it constantly and have to constantly remind myself I have to do what a) works best for me and b) gets me to MY goal. 

So with that, let's get on to What I Ate Wednesday! 

Spooky Snacks and Healthy Halloween Treats

Look familiar? Haha I'm still stuck on my apple protein muffins and honeycrisp apples. 


After my workout I had a protein shake with pumpkin, oats, almond milk, cinnamon, spinach, and ice. After a heavy leg day, I was starving and dug in to my cottage cheese and oats about an hour and a half after my shake! 


Lunch was a little different than usual! Nitrate free turkey sandwich with lettuce, mustard, and Cholula. I also had baby carrots on the side with pine nut hummus. Such an awesome lunch that gave me tons of energy. 


I also had my new favorite kombucha! I think I go through kombucha phases and right now it's Trilogy. I wish I was a millionaire so I could drink like 5 of these a day. I totally would. 


Clean pizza for snack! Man, I love this stuff. 


Aaaaand on to my weird dinner. I was thinking about how I was going to eat my salsa chicken and all that sounded good was mixing it with egg whites, so that's what I did. I also mixed in some spinach and mushrooms... can you say protein overload? It was awesome. 


As usual, casein soft serve before bed! 

OH! Thank you for your votes last week, I have a snack ready to go I just need to get it up on the blog so look for that in the next couple days!

  1. ok so I am wondering when you say you're eating a lot of carbs, what that might be? As a % of your total? Just an estimate... thanks.... I too have the carb fear as most women I think!

    1. I'm actually not counting calories right now, but I'm looking to be in the 40-40-20 range. Basically I just include carbs in every meal up to my 3pm meal.

      I LOVE your blog. I can really identify with you because I'm also quite 'little' and when I loose fat tend to get a bit scrawny on top looking so trying to build muscle to counteract that! I've just started lifting weights again and trying to get my nutrition in order. So my question is on natural sugar. How many grams of natural sugar do you keep to ? By the time I eat some cottage cheese, milk and blueberries my sugar allowance always seems to be gone on my fitness pal ! Any tips? Thank you x

  3. Hey girl. Thank you for your honesty!! I too struggle with adding in more carbs and my brain wants to also believe that I can build more muscle with less carbs...BUT I am slowly starting to see the benefits of more carbs. It really does make a difference especially in during my workouts and energy during the day. James has taught me well ;0). It just takes awhile cause I am SO hard headed, stubborn, OCD, whatever it just takes me awhile.

    I so hear you on the Kombucha's. Anytime I see a coupon I get SUPER EXCITED lol!! My two fav's right know are Mulit green and Hubiscus. I have been adding in some strange combos to eggs for dinner too. I don't know why but I have just been craving eggs like crazy!!

    Question? Have you ever tried mixing pumpkin and zuchinni as a protein muffin? Hmmm I might have to try it! LOVE both and thinking they would make a great combo.

  5. Hi Brittany,
    I'm curious about the nitrate free turkey. Is this considered an acceptable substitute to "lunch meat" turkey? I know lunch meat is terrible for you with all the added preservatives and loads of sodium, but some days I really miss the simplicity of a turkey sandwich with veggies and mustard. Plus it's nice to have an option when you can't always heat up your chicken/fish/etc dish for a meal. Also, where do you purchase your nitrate free turkey?

  7. I definitely hear you on adding carbs back. Sometimes I regret my website name (cuttingoutcarbs) because while I try to stay low carb, it's important to include them in your diet. Veggies are a source of carbs for example. And although I don't eat grains, I get the majority of my carb loading for heavy workouts from sweet potatoes.
    And I LOVE kumbucha too! But just like you, I rarely buy it because of the price. I've looked into making my own but so far I'm still too chicken to try it...

  8. I was afraid of carbs too once I limited my intake but eventually it made me snap and I messed up and it set me back. Now I'm not controlling my carb intake, just the calories. And it's a lot less stressful.

  9. I've struggled with carbs as well too. I feel like most women do. I've gone through periods when I've restricted them and it's just made me cranky, hungry, and not sleep well. It also prevents me from running long distances. Life is too short and we need to take care of our bodies, so I eat them when I need them and when my body craves them. All in moderation. :)

  10. Feel the same way! But learning to listen to what my body wants and needs and make sure I'm getting clean carbs (like you do!) balanced with protein and healthy fats. And keeping the lifts heavy so all that I'm putting in really is working the way I intend it to :) Also, agree with Katie - all in moderation (She Rocks literally rocks btw!)... I've found that taking a moderate approach to eating and allowing myself to truly feed my body what it's asking for really helps me stick to clean eats since my body craves all the nutrients it's been used to getting. I also find myself craving foods less altogether and when I'm out with friends or at family gatherings, find myself less prone to downing a whole bowl of chips and salsa or whatever else is out to munch on!

  12. Hi. Just wanted to answer about nitrate free turkey. I buy low sodium turkey, also nitrate free, from the deli at my grocery store. The store isn't a national chain, but the brand of meat is Kretschmar (I think?). It isn't as processed and the salt is lower than others. It's really all I like anymore. I just don't like regular deli meats because they are so salty. So check and see if your regular deli has a low salt turkey. It just might be without nitrates too. Otherwise, look for Applegate Farms packaged stuff. Their nitrate-free meats are popping up in regular grocery stores more and more these days. But they are salty! Hope this helps.
