Clean Butternut Squash Cookies

So, this is a joke, right? It's not really Monday. I would like to have a little chat with whoever decided working 5 days and having 2 off was a good idea. Because it's not. I'm way more in to the 4 day work week like last week and the week before, but I guess it's back to the grind as usual! Anyway, one good thing that came of this quick weekend were these awesome butternut squash cookies. B's cousin gave me this recipe, and since she eats gluten free I only had to make a couple changes to clean them up a bit... Thanks Molly!

Ingredients
2 cups oat flour
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
1/2 tsp nutmeg
3/4 cup Stevia
1/3 cup no sugar added apple sauce
2 tbsp sugar free maple syrup
1 egg
1 cup cooked butternut squash (I'm lazy and just bought the pre cut bag and microwaved)
1 tsp vanilla
1/3 cup chopped walnuts

Directions
1. Preheat oven to 350
2. Place all ingredients except nuts into mixer and mix well.
3. Add nuts and slowly fold into cookie dough.
4. Place cookie dough on prepared baking sheet one tablespoon at a time.
5. Bake for 15 minutes, let cool before serving.

They came out perfectly and are great because they're not too sweet yet still totally satisfy sweet cravings. Yes, that is possible. :)

  3. These sound sooo good!!! I cannot use stevia, could you substitute the Stevia with honey or sucanat and it still taste good? They would still be clean :)Thanks!

  4. Wow, I can't wait to make these for the BF! While we were at Costco yesterday, he kept trying to put non Clean Eats in the cart and I kept making him put everything back. Then he said "So basically, if it tastes good, I can't have it?!" need to make these and show him clean eating can be tasty. How did you ever get Big B on board with clean eating?

  6. Jovana- I just kind of made the switch to clean eating at home, so whenever I cooked, it was clean, and he ate it. When we first started he was pretty strict with me, but nowadays he strays often. I know when summer time comes he'll commit again to lean out. I would say just make the food, if he eats it great, if he hates it then oh well at least you are healthy! You can't really force it on someone, they have to want it for themselves.

    Heather- Yes! I get them at walmart and they come in a bag that you can just pop in the microwave and cook, so convenient!

  8. These are BOMB! I made them last week, and everyone (roommates, boyfriends, random passersby) LOVES them! A few thought they were gingerbread, so I didn't bother ruining it for them. ;) Thanks for sharing, as always!

  9. What did I do wrong?? Mine do not look anything like yours! They taste pretty good but they are very dark in color and they are not flat and "cookie" shape. They are kind of a odd, bumpy blob shape ;)
