Carrot Cake Protein Bars

Not sure if it's just me, but I am quite relieved that the holidays are all over. Don't get me wrong, I love Christmas love time away from work, but I also love routine and I'm so glad to get back to it! Yesterday was spent cleaning, de-Christmasing our house, and experimenting in the kitchen a little. One of my experiements is definitely blog worthy, in fact if you are doing your bulk cooking today I would make these. Just sayin'. 


Ingredients
1.5 cups oat flour
3 scoops vanilla protein powder
1 tsp baking soda
1/2 tsp salt
1/3 cup Stevia in the raw
3 egg whites
1 cup almond milk
1 baby food carrot flavor
1/4 cup Fage greek yogurt
1 large carrot, grated (use the smallest holes, I didn't but I will next time)
2 tsp cinnamon
1 tsp nutmeg (don't forget this!) 
2 tsp vanilla
*Next time I will also add walnuts*

Frosting
1 1/2 scoops vanilla protein powder
1 packet Truvia
2 tsp Almond milk 


Directions
1. Pre-heat oven to 350
2. You know me... combine everything (except frosting) in mixer and mix! 
3. Pour into 8x8 prepared pyrex dish and bake for 30 minutes.
4. For the frosting, slowly add the almond milk to the protein powder and sweetener until you have a frosting consistency. Wait for bars to cool then spread on top.


I wasn't even sure if I liked carrot cake... okay I actually don't think I've ever had carrot cake, but I'm very glad I made these because now I can say I LOVE carrot cake!

  4. These actually look pretty good. I don't have vanilla protein powder though, huge container of chocolate. Do you think that would be as good, or not so much?

  7. Thanks Little B. I just bought the same protein you buy from bodybuilding.com. I decided to buy the 5 pounder because of the cost and because I typically prefer drinking the chocolate...but I prob should have purchased a small vanilla one for baking too. Next time!

  8. Do you have the nutritional info on these? Just made and they are delicious..opted out of the jar baby food and added pecans, yummy! Also what is your serving size? Great job on your site, love it!

  9. I have a question.. I've made the carrot cake bars 3 times and every time I make them after a couple of days they start smelling like ammonia? Just made them right now and I can already smell it? What do you think it is? Do you think im doing something wrong?

    1. That's so strange! You definitely need to keep them in the fridge/freeze or they will go bad quickly, but they should be perfectly fine straight out of the oven! I'm sorry, I have no idea why they smell funny :(

  12. I made these and they turned out great! The only thing that I changed was rice flour instead of oat flour and I used unsweetened apple sauce in place of greek yogurt. Fantastic! Thanks for posting! :)
