Taco Tuesday

Today I am tired. I wonder why I can go to bed and wake up at the same time on two different days and one day (today) I wake up feeling like I only slept for an hour? Hmm. I think being tired is the worst, and I also think my awesome lunch is not helping with my tired-ness issue. Before I show you what I had for lunch, I have to show what we had for dinner last night. 


Now that I'm looking at the picture, I don't really know what we had for dinner!? I suppose a spicy shredded chicken salad. Yep. Sounds about right. Before I ran out the door yesterday morning I threw some chicken breasts in a freezer sized ziplock bag and added lime juice and (lots of) Ms. Dash fiesta lime seasoning. {If you don't have this, you need to.} After work, I threw the chicken in the oven at 350 for 40 minutes and then used a fork to shred it. It would be super awesome if I had a slow cooker at home to cook the chicken in, but I don't. Poor me. 


I chopped up some lettuce along with tomato, red onion, and avocado and made my favorite spicy sauce (greek yogurt and Tapatio) and bam! Dinner was served. Quick and easy. 


I shredded up the other two chicken breasts for lunch today and used the exact same ingredients to make tacos! (Added in the tortillas, obviously.) 


I put the tortilla and chicken in tupperware and all my toppings in a little ziplock, so once it was lunch time I just stuck the tacos in the microwave and added the toppings afterwards. They were so good, I wish I had like 7 instead of just 2. Dangit


Now how easy was that!? Hardly any time or effort and I made two dinners and two lunches. Don't tell me you don't have time to eat healthy people, just don't do it because I will call you a liar. Okay maybe not, but I will at least think it in my head :)

  2. No I didn't, I actually just stick them under the broiler for a couple minutes :)

  4. Can I ask a stupid question? What is a broiler? I am South African and we don't have something called a broiler....so I'm thinking we call it something else?lol... Another quick question while I'm at it... I found a cool pizza mix but I'm not sure if its as healthy as it says coz I'm not that great at deciphering labels yet:( is it ok for me to tag you on FB then you can have a look at it? Sorry to be a bother:(

  5. Not a stupid question at all! Basically the broiler is the top set of coils in the oven, so you can turn just those on and put the food on the top rack to crisp or brown something quickly. And yes, I would love to look at the pizza mix, just stick the photo on my wall :)

  6. I LOVE these tortillas! i bake them and crush them on top of black beans, shredded lettuce, cabbage, salsa, and avacado! :)
