Monday after a four day weekend is no fun. Not one bit of fun is involved in this day. Oh well, we have another one coming up in less than a month! (WooHOO!) I hope everyone enjoyed their Thanksgiving and that your skinny jeans still fit :) I promised I would share the recipe for my sweet potato (yam) casserole if it came out good, and it did!
- 5 large yams
- 1/2 cup almond milk
- 3 egg whites
- 1/2 cup sugar free maple syrup
- 1/4 cup truvia/stevia/xylitol
- 1 tsp pumpkin pie spice
- 1/2 tbsp cinnamon
- 1 tsp vanilla
1. Pre-heat oven to 350
2. Combine all ingredients except pecans in a mixing bowl and mix well.
3. Pour into a prepared 8x8 Pyrex dish.
4. Place Pecans in a bowl with about 1 tbsp syrup and 1 packet of truvia and mix
5. Cover top of casserole with pecans and bake for 40 minutes
We also went to a beautiful wedding over the long weekend- Congrats to Sarah and Justin! I think I could go to a wedding every weekend and never get tired of them... although that would not be good for those skinny jeans!
Speaking of skinny jeans again, I have realized my eating has been a little off these last couple of weeks. Now, this is kind of to be expected simply because this time of year there are tons of events and holidays which (un)fortunately usually come with drinking and eating. I am always conscious of what I am eating and always try to make the best choices possible, but no matter how hard you try sometimes life just gets in the way. SO, I am challenging myself to one month of completely clean eating which means getting all my meals in on time, keeping my macros right on target and not drinking. My challenge will start today and end on Christmas, and although it may not seem like a long time, we have 2 company holiday parties, a birthday party, and an engagement party all planned in the next 4 weeks. I'm not trying to lean out at all right now, but eating clean and staying on track just makes me feel so great, and when I don't do it my body really does hate me i.e. TODAY.
