Perfect Pumpkin Protein Pancakes

I did it!! I created the perfect pumpkin protein pancake recipe! I was so excited this morning when I took a bite and the pancake was moist and wonderful inside, and it was even more exciting when B said he wanted them for breakfast every day this week :) So, here it is!

 
Ingredients
1 cup oat flour
2 scoops vanilla protein powder
1 tbsp truvia
1 tbsp cinnamon
1/4 tsp all spice
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp pumpkin pie seasoning
2 egg whites
1/4 cup raw pumpkin (heaping) {Not mix, just pumpkin}
1/2 cup unsweetened almond milk
2 tbsp greek yogurt


    Directions
    Heat prepared pan on low while you make the batter
    Combine all ingredients in mixing bowl and whisk together
    Turn the heat up on your stove to about a 5 out of 10 and pour in desired amount of batter
    Pancake is ready to flip when you start to see bubbles (see photo below)
    Cook on other side for about 1 minute or until cooked through


    I topped B's with some greek yogurt and cinnamon, and I ate mine plain. Give them a try and let me know what you think!

      1. It makes 4 large pancakes, so 2 servings :)

    2. I noticed there weren't any comments on this recipe so I thought I'd add my opinion. I LOVED it! This will now be my "go to" breakfast. I was out of blueberries and couldn't do my oats without them and I really really struggle getting my egg whites down. This was a perfect way to get in my oats and protein this morning. The closest thing to a traditional pancake I have found in a clean recipe. Thank you so much for taking the time to post your recipes. They help me daily!

    3. Made these for dinner last night, I love breakfast for dinner! They were amazing! I was so surprised. Pancakes are really hard to make healthy, trust me I have tried time and time again. Will be making these every weekend!

    5. Sorry but just curious about the Raw Pumpkin.. did you just get actual pumpkin chunks and blend them up to become a puree or did you buy it as a liquid?
      I noticed in the photo there is pumpkin pie mix so I was just checking.
      I live in South Africa and they don't have the convenient "Thanksgiving" themed things like in America such as Pumpkin Pie mix or puree so trying to figure an alternative! :)
