Blueberry Protein Muffins

This is a variation of a recipe Jamie Eason posted over the weekend, I will say it is my favorite so far. These are so yummy-- if you try one recipe, it has to be this one!

- 1 1/2 c oat flour
- 2 scoops protein powder
- 1 tsp baking soda
- 1 tsp salt
-1/2 c Stevia/Truvia/etc
-2 egg whites
-3/4 c unsweetened almond milk
-1/3 c unsweetened apple sauce
-1 tbsp vanilla extract
-1/4 c non fat greek yogurt
-1/2 c blueberries (I threw a couple on top too)

1. Preheat oven to 350
2. Combine wet ingredients in one bowl, dry in another, then whisk together.
3. place batter into greased muffin pan (don't fill all the way up because they do rise a little)
4. Bake for 20-25 minutes or until toothpick comes out clean. (She recommended 45 minutes, but mine were done after 20- so I guess it just depends on your oven)

  1. instead of stevia can you use organic evaporated cane sugar?

  2. Took 3 (!) trips to two different grocery stores to find the ingredients and I have to admit I was disappointed. I guess if you have the mindset that these are healthy :) and not having expectations of a bakery style muffin? They were kinda dry and not very sweet...maybe I should increase the applesauce and stevia?

  3. Funny you chose these, I just made them yesterday after not making them for a while and I remembered how much I love them! You have to keep in mind my recipes are meant for people trying to build lean muscle, not JUST people who want to eat clean. If you compare my blog with many other clean eating blogs you will see tons of ingredients I don't use... whole wheat flour, agave nectar, honey, etc. I would never use these ingredients because they are not conducive to my fitness goals. When you're baking with protein powder and oat flour, you have to expect that it's going to come out differently than cooking with butter and regular flour. I followed this recipe to a T yesterday and they came out great, but yes, if you want something sweeter I would increase the stevia... Also, Stevia by nature is very bitter. If you're a sweet person you should be using Truvia or Xylitol instead because they are made from the sweet side of the leaf.

  4. I made these last night and wanted to tell you they are delicious! I did add a serving of SF Vanilla flavored syrup (just to bump up the sweet a bit) and they came out so moist and yummy! My 5 year old can't get enough of Thanks for the awesome recipe!

  12. Hi All , Ive made these twice now. The second batch i used a different protein powder and they didnt rise. Interesting hey! has anyone else had that problem baking with protein powders? Overall tho the first batch was good great to take to work for meal 2 :-)

    1. Try adding 1/4 tsp of salt to react with the baking soda :)

  15. I made these last week and they were great! I've made a fair number of protein bread recipes and so far this one is the best. I used xylitol powder instead of stevia because my husband can't stand the stuff! Used only 1tsp vanilla (was the tbsp a type-o?) and topped them off with the glaze you mentioned in your blueberry lemon bread recipe. Even my husband liked them! Thanks for the recipe.

  18. I just did the macros! 111 cal, 15 carbs, 2 fat, 9 protein, 2 fiber, 4 sugar - awesome :).. this was the whole recipe, based on 12 muffins at 1 muffin per serving

  20. Really great muffins! I made these tonight and cut the recipe in half to make 6 muffins.. I was shocked at how delicious they were! Personally I would add a little less Truvia- but it's all based on opinion! Thanks for sharing!
